Sometimes us foodies are too lazy to go out for food. Especially since it’s midterms season and we’re all racing to meet dozens of deadlines. Even the most dedicated food bloggers don’t eat out every meal.
It’s been a stressful week and the cold weather is keeping me locked inside my apartment. In order to maintain my sanity, I took a short break from my responsibilities to do some fall baking. I searched Pinterest for some inspiration and after scrolling through hundreds of fall recipes, I finally settled on two: pumpkin truffles and pumpkin spice muffins.

Isn’t pumpkin so cliché?

Dark Chocolate Pumpkin Truffles
These caught my eye because they looked simple and had a short list of ingredients. Bonus points: they’re vegan.
The mixture was fast and easy to make, but the consistency was too runny so I added more flour than what the recipe originally called for. The truffles froze quickly and I proceeded to coat them in dark chocolate. Tip: add lots of coconut oil to the chocolate chips when melting to maintain a smooth consistency.
Final verdict: Is it weird to complain that a pumpkin truffle tastes too much like pumpkin? The pumpkin was too overpowering, but the recipe can easily be saved by using less pumpkin or adding more of the sweet ingredients.

All I saw was cinnamon sugar and started pinning the recipe to my food board before I even knew what it was.
The recipe was easy to follow and most of the ingredients are items that many students would have in their homes. I did not have brown sugar so I doubled the white sugar portion and they still turned out beautifully.
Final verdict: We have a winner! These muffins have everything you want from a fall treat–pumpkin spice, cinnamon and sugar. When you first bite into it, you are met with a hot rush of cinnamon sugar and melted butter before the pumpkin spice takes over and dominates your taste buds.
